Potato Leek Soup Recipe

Northern Ireland has pleasant long summer days when you can tour and travel and enjoy the beauty of nature. But it also has long and cold winter nights. During such times you want to sit in the house, by the fireplace and watch the flames flicker. On such evenings nothing beats a nice homemade potato soup that is tasty, healthy and filling. In our website we have a number of traditional and easy potato soup recipes. This recipe is for a tasty leek and potato soup. We trust you will enjoy it and bring a little taste of Ireland into your home.


Ingredients – 6 Servings

3 lbs of potatoes

2 large leeks

4 cups of milk

4 cups of water

4 tablespoons parsley

Salt to taste


Wash the leeks well and cut them finely. Skin and wash the potatoes and cut them into fair sized pieces. Put the chopped leeks in a large pan and simmer them in water for a few minutes in low fire. Ensure they don’t turn brown. Pour in the remaining water, the milk, the potatoes and the parsley. Add salt to taste. Cook until the potatoes are soft. Put the mixture through a food mill or food processor. Your soup is ready.


Once the soup is smooth put it back in the pan and reheat it. We love our soups served with croutons. Rarely we sill serve them with cream, which is tasty but also has more calories. Some hearty brown wheaten bread will also make an excellent accompaniment.


If you want to try different flavors, replace parsley with another herb of your choice. If you want to give the soup a more American-Irish flavor add some sweet corn.
