Vegetarian irish stew recipe (serves four)


Fresh from the Garden

Ingredients

4 Potatoes, cubed

2 Carrots, thickly sliced

1 Onion, chopped

1 meat alternative – see above

1 Tbsp molasses (optional)

1 tsp rosemary

2 tsp parsley

1 Tsp Mackays chicken seasoning (or your favourite)

A little oil

Saute onions in a little oil in a large pan. Add vegetables and water to cover, meat alternative, herbs and seasoning and bring to the boil.Simmer until potatoes are cooked. Stir occasionally.

Serve with irish soda bread or wheaten bread to mop up the juices.

There is no set amount for the meat alternative. After all, in houses all over the island you could tell if it was the beginning of the week by the amount of the meat. At the end of the week, the stew only had potatoes and carrots in it, the weekly amount of meat was all consumed!

Other ingredients for vegetarian irish stew

The molasses is optional. It does give a rather nice colour to the gravy. It will not sweeten the dish. Feel free to omit it if you don’t have any.

McKays chicken seasoning:

This is a must for cooking with TVP or Gluten. It really gives superb flavour. If you don’t have any, beg your american friends to send you some. Having said that, I have been vegetarian for 15 years now and I have done rather well without it… Do substitute with your favourite seasoning.

Herbs:

Choose your favourites although rosemary and parsley have a natural affinity with potatoes.

Chunky pieces of vegetables

The charm of the irish stew are the chunky pieces of vegetables. Cut the carrots thick circles, the potatoes in hearty cubes. Can you imagine that mama swinging her big knife over the root vegetables fresh from the garden while the children were about the kitchen doing chores? The baby was probably in the sink playing with half an inch of water to keep her out of mischief. No time for minuscule, intricate vegetable cutting here…
