Irish Potato Pancakes Recipe

Potatoes are the number one food in Northern Ireland. Potatoes are tasty, nourishing and can be cooked many different ways. And the Irish know how to cook them. Pancakes are a favorite food the world over. Combine potatoes and pancakes and you get a good tasty Irish recipe. Cook these pancakes for your guests or family and they will love you for them.

Ingredients

So, are you ready for this adventure in Irish cooking? Here we go. You will need the following ingredients:

2 kg potatoes

4 tablespoons of plain white flowers

2 Eggs

1 Teaspoon Baking Powder

1 Cup Milk

Salt to taste

1/2 Cup Chopped fresh onions (optional)

Directions

Skin the potatoes, boil them and mash them. Whip the eggs and mix together with the baking powder, the salt, the scallions, the flour and the milk. Add this mixture to the potatoes and mix well.

Grease a frying pan lightly and drop in the mixture with a tablespoon. You can make the pancakes smaller or larger depending on how many spoonfuls you drop. Cook until the underside is browned. Flip them over and repeat the process.

Remove them from the frying pan and place them on a plate with a paper tissue on it to adsorb any excess oil.

Serving Instructions

Serve them with fresh green vegetables, tomatoes, and a little salad dressing.
