Irish Potato Soup Recipe
Potatoes have been a staple in the Irish diet for nearly four centuries. The Irish may have them for breakfast, lunch and tea. And they love them. Northern Ireland is no exception. While potatoes can be cooked in many different delicious ways, a nice warm potato soup is an excellent main course for an evening meal on those long and cold Irish winter nights. In this website we have a number of potato soup recipes, but this one is a favorite. It is relatively easy to prepare, delicious and healthy, full of the natural nutrients of nature.
Ingredients – 6 Servings
3 lbs of potatoes
2 large onions
4 cups of milk
4 cups of water
4 tablespoons parsley
Salt to taste
Wash the potatoes, remove the skin and cut them into fair sized pieces. Chop finely and simmer the onions in a little water in a large pan in low fire. Do not let them become brown. Add the remaining water and milk, the potatoes and the parsley into the pan, and salt to taste. Cook until the potatoes are soft. Put the soup through a food processor or mill and reheat in the pan.
Serve the potato soup with croutons. If it is a special occasion you can also garnish with some and cream. But remember, cream is quite high in fat and cholesterol so don’t make it a habit to eat your potato soup with cream every time. Reserve it for special occasions. The soup tastes just as good with croutons alone. Alternatively, serve the soup some hearty brown wheaten bread.
If you want to give the soup a more American-Irish flavor add some sweet corn. You can also try different herbs in place of parsley depending of your taste.
